Serves 4


  • 1 Medium Sweet Potato
  • 3Tbs peanut butter
  • 3Tbs soy sauce
  • 1tsp sesame oil
  • 1Tbs maple syrup
  • 1tsp minced ginger
  • 2 minced garlic cloves
  • 2Tbs lime juice
  • ¼ cup vegetable stock plus 3-4Tbs for the dressing.
  • Garnish: chopped coriander, sesame seeds, spring onions, peanuts, lime wedges


  1. Make the dressing by whisking peanut butter, soy sauce, sesame oil, maple syrup, ginger, minced garlic, lime juice and 3-4 Tbs vegetable stock together
  2. Peel and spiralise the sweet potato
  3. Peel and dice the onion
  4. Heat a drizzle of oil in a pan and sauté the onion
  5. Add Spiralised sweet potato noodles to the pan and ¼ cup of vegetable stock and cook for 6-7 minutes until al dente
  6. Pour the dressing into the pan & toss to coat
  7. Cooked until the dressing is warmed through
  8. Serve the noodles in a bowl, garnish, and enjoy!
