SWEET POTATO BREAKFAST TACOS

Serves 4

INGREDIENTS

  • 6 sausageS – meat taken out of skins 
  • 1 pkt soft tortillas  
  • Cheese Scramble 
  • 4 free range eggs 
  • 1/2 cream 
  • 1/2 grated parmesan 
  • 2 tbs butter 

SWEET POTATO PICO DE GALLO: 

  • 1 large sweet potato, peeled & cut into 1cm x 1cm pieces – roasted until tender with salt & a pinch of smoked paprika  
  • 1 tomato, diced 
  • 1/4 red onion, diced 
  • 1 small green capsicum, diced  
  • 1 ear of corn, charred 
  • Juice of 1 lime 
  • Salt & pepper 

TO SERVE: 

  • Fresh coriander 
  • Lime wedge  

DIRECTIONS

  1. Scramble – Mix 4 eggs together along with cream & parmesan.
  2. Melt butter in a pan and slowly cook eggs until scrambled consistency, put aside. 
  3. Fry sausages off in a pan and break up as you go to resemble a crumb, put aside.
  4. For the sweet potatopico – add the chopped cooked sweet potato, tomato, green capsicum, red onion and charred corn to the bowl then dress with fresh lime juice, olive oil & season with salt and pepper.  
  5. To assemble tacos place tortillas down on the plate then thethescramble egg , next top with sausage mix the pico. 
  6. Top with fresh coriander & lime wedge.
